Recipe of the week

I'm always looking for new ideas of things to cook. I'm going to start posting recipes every once in a while and I hope that those looking at our blog will post their favorite recipes in the comments portion, and then we'll all have new things to cook!
So, here's what I made tonight... It's stuffed ravioli with snow peas and peppers. This picture is before I added the sauce, which was a creamy red sauce.
2 packages Bertolli refridgerated raviolis - on sale this week at Frys
2 or three colored sweet bell peppers diced
Snow peas
1. Boil the ravioli
2. Saute the snow peas and peppers in olive oil
3. Mix and add sauce
It's easy and yummy!

Santa Fe Rice Salad
(makes 5 servings)

1 pkg of Rice-A-Roni chicken flavor
3 TBLS of veg. oil
2 cups cooked chicken or turkey
1 1/2 cups chopped tomatoes
1 cup frozen corn or 1 can
1/2 cup chopped red or green bell pepper
1/4 cup sliced green onions
2 to 3 TBLS chopped cilanto or parsley
2/3 cup salsa or picante sauce
2 TBLS lime or lemon juice

1. prepare rice according to the box substituting 1 TBLS oil for margairne. cool 10 min

2. In large bowl, combine rice, chicken, tomatoes, corn, peper onions and cilantro

3. Combine salsa, lime juice and remaining oil. Pour over rice mixture, toss.


This is really yummy. I do leave out the salsa and have made it without the onions and it turns out pretty good. My kids will eat it.
